How to Set/Tune a Charge Temp map?

Like for IAT?

If it's hot, add more fuel,
If it's cold add less fuel.

Unless you're talking about Ignition timing?

As it gets hot, remove timing,
As it's cold, add timing

Those are very, very generic rules

Cold = more fuel.....
He is talking about chargetemp estimation. Higher number means that its looking at your CLT more than IAT.
I will post a generic 3d setup for you.

the setup has a good estimate map in the on board help files

Yes cold= more fuel. Typo on my end.

Is there a MAT correlation table?

In general EMU uses IAT (charge temperature to be exact) for fuel calculations so the fuel dose is automaticaly corrected.
However there is an additional IAT correction table where you can apply additional correction.

Have you developed some stragedies for estimating charge temp? I suppose that for not aspired engines it would be more rpm dependent function rather than MAP. Anyone have some test done?

Yes im very interested to hear more thoughts on this setting and could be quite influential on the final tune. So other than performing extensive testing measuring and trials it would be nice to have some additional factors or guidelines to base our best guesses on :)

This table is estimation and you can tune it by trial and error process.

Wow i seem to be stalking you today ;-)
I just use charge temp to make corrections to fueling based on engine heat soak at low throttle settings only. Every engine is going to handle heat differently, and depending on IAT sensor location ( intake or in manifold), your Charge temp table will be different. You want to lean more towards IAT if the sensor is in the manifold, and maybe more towards coolant if its pre throttlebody. If you IAT is in a bad spot that it will really heatsoak (over exhaust manifold) then you will lean more towards clt temp. Just gotta tune for effect here.
